Coglioni di Mulo, the salami with the most particular name, the shape explains its name. It is obtained by finely grinding the pork shoulder and the underlying part. The salami is enriched with natural seasonings, such as salt, pepper and garlic, a square section of lard is added in the center. Strictly stuffed into natural casing, it is slightly softer than other cured meats, it ages for 70/90 days, starting from the cellar with a wood-burning fireplace.
