Spinach & Cream Cheese Vol Au Vent

Hi Foodies! First off, Happy New Year 2021!! I hope you had a blast despite the difficult times and that you’re all staying safe. 

I haven’t been around a lot because of a busy schedule but that doesn’t mean that I have forgotten about you. In fact, I’m here with one of the easiest recipes ever. 

Do you like Vol au vents? These mini savory pastries are wonderful and work great as starters or appetizers. You will find ready made vol-au-vent cases in most supermarkets across the island (if you’re in Mauritius) or some local bakeries also make them.

In case you’re wondering where I got mine, they’re from Patisserie Ideal in Cottage. They come uncooked and frozen. You just need to pop them in the oven for like 20 minutes and you have freshly baked vol-au-vent cases. 

Today I’m going to teach you how to make a delicious Spinach & Cream Cheese filling to make some very fancy yet easy vol-au-vents. These are just a treat! 

Ingredients for around 15-20 small vol-au-vents

  • A cup of fresh spinach leaves (blanch them for a few minutes)
  • 180G cream cheese (i used Philadelphia cheese by Kraft)
  • Salt
  • Pepper
  • Olive oil
  • Basil leaves or thyme

Preparation:

  1. Preheat your oven.
  2. Sautee your spinach in some olive oil and salt slightly. Once ready, transfer them to a bowl. 
  3. Add the cream cheese and mix it thoroughly before seasoning with spices like basil or thyme. You can use dried oregano as well. Season according to taste with salt & pepper.
  4. Let the mixture cool a little.
  5. Next, line a baking tray with parchment paper and place your vol-au-vent cases.
  6. Add the filling with the help of a teaspoon
  7. Bake for 15 minutes at around 160C or according to your oven.
  8. They’re best enjoyed when hot.

You can use this same filling for other recipes such as mini quiches, canapes and so on. It’s pretty easy but looks like you took a lot of time and effort to make them.
