Product Description
Convert traditional 20-degree factory edges of European and American household knives into high-performance Trizor 15-degree edges with this professional electric knife sharpener. It quickly sharpens all brands and types of knives, including straightedge and serrated and contemporary double-bevel or single-bevel traditional Asian-style knives. The three-stage unit combines ultra-sharp 15-degree edge technology with the strength and durability of the triple-bevel arch-shaped Trizor edge, which resists dulling longer than conventionally sharpened hollow-ground or V-shaped edges. Simply pull the blade through the slots to obtain the desired level of sharpness-the machine accommodates the thickest and thinnest knife blades and adjusts for the proper angle automatically thanks to its flexible spring guides. The first stage features conical disks with diamond abrasives that create extremely fine micro-grooves and the first major bevel of the arch-shaped edge. The second stage uses even finer diamond abrasives on conical disks to shape the second, smaller bevel with finer microgrooves. The third stage uses patented, flexible, abrasive stropping disks that create a microscopically smooth, sharp edge with minimal metal removal, helping to extend the life of fine knives. Even more, it produces the third and final bevel while polishing the micro-grooves formed in the first two stages. Stage three can also be used to straighten and sharpen each tooth of serrated knives. Use the three stages in different combinations to create a custom edge. Other highlights include a simple front-access on/off switch, four stabilizing feet for secure operation, and durable construction for long-lasting performance. Assembled in the USA, the knife-sharpening station measures approximately 6-1/5 by 12 by 6-2/5-inch and carries a three-year limited warranty.

Comparing it to other systems, it is faster than all the manual systems. There may be other sharpeners that are as fast, but all of those are powered. Time is money people! Accuracy is a quantification of edge quality. And as well as the naked eye can see, the results are superb! Ease of use couldn't be better. This sharpener is as user friendly as any power tool I've used. Even a caveman can do it! Durability remains to be seen as I've only had this thing for a couple days. But I've sharpened my knives, my fathers knives, and a friends knives. About 25 in total. I've recently contemplated making a cardboard sign and begging on street corners for dull knives. This thing is addicting, people!
Who should buy this thing? Anyone with 135 bucks and dull knives. If you have nice quality cutlery, enjoy cooking, and have at least 140 dollars in your checking account, buy this sharpener and six pack of beer so you can sit back and admire your super sharp knives. Actually, it even works quite well on crappy cutlery. I'm talking to you 5 dollar Martha Stewart paring knife!
Who shouldn't buy the trizor? All you folks with so much money you can throw away your knives when they get dull. Or anyone not smarter than a cave man. If you are a natural klutz and pose a serious risk to yourself with a sharp knife, this may not be the product for you unless your brother in law is a trauma physician and you have his cellphone number.
I used this machine to sharpen several knives with relatively small nicks in them. It took a good number of passes to grind them out. Those manual sharpener advocates that say these machines remove too much material too quickly and will ruin your knives most likely are either investors in manual sharpeners, professional sharpeners who don't want to lose your business, or hipsters with degrees in the arts with lots of free time between job interviews.
Is this the perfect sharpening system? Will it give you the finest edge possible? Can it solve world hunger? Probably not. But, can it put an edge on your knives that meets or exceeds the factory edge? Absolutely! Can it do it quickly? Without a doubt! Will it ruin your knives with one slight bobble? No way Jose!
Buy it. Use it. Enjoy sharp knives. Spend the rest of your free time begging for dull knives on the street like me!

The efficiency and ease of use of this sharpener impressed me from the start. The 3-stage sharpening system, featuring diamond abrasives, proved to be a remarkable combination. In just five minutes, my aging kitchen knife was revived and brought back to life. Although it didn't eliminate all the nicks in the blade edge - which would have required a complete reworking of the edge - it still provided a substantial improvement, leaving my knife impressively sharp.
I decided to put the sharpener to the test with a blunt butcher's knife, and it rose to the challenge. Given the knife's extremely dull state and wide-angle edge, it required more time and attention. It took approximately 30 minutes of careful sharpening, but the results were outstanding. The sharpener successfully restored the blade's functionality, allowing me to effortlessly slice, skin, and chop my food with precision. It's truly a versatile tool for sharpening a variety of knives.
One important thing to note is that it's crucial not to apply excessive pressure on the blade during the sharpening process. I discovered that I had a tendency to press too hard, which hindered the sharpening progress. However, with practice and patience, I quickly learned to apply the correct amount of pressure for optimal results. I recommend using a cheap knife initially to practice and get familiar with the technique. Once you have mastered it, you'll be able to confidently sharpen your prized knives.
In summary, the Chef'sChoice EdgeSelect Professional Electric Knife Sharpener has surpassed my expectations in every way. Its ability to quickly restore the sharpness of my kitchen knives is truly remarkable. While it may require some practice and patience, the results are well worth the effort. With proper technique and care, this sharpener will breathe new life into your blades, making slicing, skinning, and chopping tasks a breeze. I wholeheartedly recommend this outstanding sharpener to anyone in search of professional-level results.
Would absolutely recommend.
I have owned 2 of them, and am buying a third.
The first lasted for 5 years. After many uses on all my kitchen knives (about 20) the abrasives were wearing out.
The sharpening is easy to do. There is a rough diamond sharpening guide, a fine diamond sharpening guide and a buffing guide.
This sharpener works quickly, and I have reprofiled hard steel edge knives with it. Once sharp, it makes quick work of touching up knives that are slightly dull.
Top reviews from other countries
About a year ago, I got a ceramic for the Shun's, which that works great to maintain the edge on those knives, but the older knives still did not sharpen up. So I got the Trizor XV.
After sharpening about a dozen knives, I've gotta say, this thing is amazing. I was able to put a wicked sharp edge on the Henkles and Victorinoxes. The instructions suggest it can take up to 20 swipes of the first stage to put the 15 degree on the edge. I'd say that is accurate. I wasn't counting, but I am sure it was at least 20 for several of the knives. Then stages 2 and 3 just clean up and buff the edge. Just beautiful. Knives are now a pleasure to use.
I then tried it on a couple older "stainless" knives. It definitely sharpened them up, but I could never get the "burr" to appear in the first stage. Suggests to me that the metal in the blade is mediocre. Still, made them very usable, but did not provide the edge I got from the better knives.
Finally, I tried the sharpener on some other utility knives -- fillet knife, a couple of pocket knives and a multitool. Again, the better the steel, the better the edge.
Net is, this may seem pricey for a knife sharpener. But, it depends on how much you value finely tuned knives. I have used a steel for decades, but gradually, the knives just loose their edge and need to be revitalized. If you were so inclined, you could do it by hand using wet stones, which I have done for chisels and hand plane blades. But, that is way too much work.
The Trizor XV definitely delivers the goods.

Cleanup could be more compact as I found that it leaves quite a mess with all the metal dust.
