Tasting of 7 wines

4. Tasting of 7 wines

We always start with the tasting of our 7 references, during which presentations are made and we all sit together to taste the wines accompanied by some typical local products. We tell the story of the wine you are drinking, how it was grown, when it was still grapes in the vineyard, and how it was processed in the cellar. Meanwhile, the dishes also arrive, within which you can find numerous typical local products, each to be paired with a different wine. We start with the Roero Arneis, the only white among the reds, a fresh and fruity wine: it is accompanied by tuna sauce. We then move on to red wines with Dogliani, which we usually pair with salami. First the Dogliani DOCG "Sambù", an easy to drink and light wine, which introduces the Dogliani DOCG "Superiore", more structured and complex. Nebbiolo and Barbera are paired with lard and bacon: the former is fresh and young, the latter is soft and fruity. Subsequently we will taste the Langhe "Excelso" blend of several wines to be tasted with meliga pasta (typical Piedmontese biscuit). And then the last but not least wine, the king of wines, the wine of kings: Barolo, to be tasted with cheese and cugnà (halfway between jam and sauce, it is made with fresh fruit and dried fruit ). After the tastings, we move to the cellar, where you can see how we work to create the wines you have just tasted: fermentation, the decanting and aging tanks, and finally the bottling and labeling phase.

There are 11 communes that make up the wine producing region of Barolo, including the five most prominent ones: Barolo, La Morra, Castiglione Falletto, Serralunga d’Alba, and Monforte d’Alba. To break it down, Langhe can be divided into two areas, the Serralunga Valley where the Fontanafredda estate is located, which encompasses the eastern communes of Castiglione Falletto, Monforte d'Alba, and Serralunga d'Alba, and the Central Valley, which covers Barolo and La Morra. Very pleasant experience, I would say beyond expectations, despite the description on the site perfectly reflecting reality. Davide guided us through his vineyards, passionately telling us the story of the family and his business. He explained to us in detail everything that revolves around his work and answered our questions with pleasure. The walk amidst the quiet and breathtaking landscapes gave us truly unique moments. Returning from the vineyards we tasted the excellent wines that he produces himself. Care, authenticity and eco-sustainability characterize its production. To accompany the excellent wine, traditional foods of indescribable goodness. I would say everything was perfect!

Fantastic! A warm welcome by the daughter of the winemaker at the beautiful vineyard. 7 beautiful wines accompanied by a small snack to bring out the wonderful flavours of the wine. The in depth knowledge of the flavours from the tasting guide, really learned me a lot.
