Alluvioni Cambiò Celery

Widespread in the area of Alluvioni Cambiò since 1930, the local cultivation of celery has specialized with products of different varieties.
There are two groups: "green" and "self-whitening", where the plant is tied and almost all the stem covered with earth one month before the harvest.
Among the many varieties there is Castelnuovo Scrivia golden giant, with large ribs, wide strain, and light green scented leaves. Each year the town houses a festival to promote and enhance the vegetable, characterized by the preparation of recipes based on celery.
It is harvested by hand and is cleaned once in the field; then it is washed and cleaned from the remains of the earth and from part of the epigeal apparatus. If kept at 0°C and with a humidity of 90-95%, it can be preserved for 2-3 months.
