The evisceration spoon is useful to remove the internal organs of both birds and web-footed birds (ducks and geese). It is composed of two-ended spoons of different sizes: the bigger one is suitable for removing the entrails, the smaller one is suitable for removing liver, lung and heart.
Clean the evisceration spoon after each use.
