Chia seeds are small black seeds from the plant Salvia hispanica, which comes from Central and South America. Grated or whole, chia seeds are used in Paraguay, Bolivia, Argentina, Mexico and Guatemala for nutritious drinks and food. Usually, chia seeds are small, oval, about 1 mm in diameter. They are dotted in brown, gray, black and white. The seeds are hydrophilic, absorbing when soaked 9 up to 12 times their weight in liquid. When soaked, the seeds develop a sticky coating, which gives the chia-based drinks a discreet gel texture.
