meet riley reep
My mom always use to say that life is filled with so many surprises, but I don’t think I quite understood that phrase until now. In May, I was finishing up my time in college while trying to navigate what this next chapter of life would look like. Three months later, I am remodeling a house while attempting to figure out what this “adulting” thing everyone talks about is supposed to look like. Life took a complete oneeighty, but I wouldn’t have it any other way. For those of you who don’t know, my name is Riley Reep. I am a recent graduate of Texas Tech University where I received a degree in agricultural communications with minors in agribusiness and animal science. I have been an intern with the Texas Pork Producers Association since 2019 assisting with the CTBR program and magazine ads. Over time, I ventured off to intern with the American Angus Association, Showpig.com, and National Sorghum Producers, but eventually came back to TPPA during the fall of 2021. Recently, I accepted my current role where I will be working with youth, membership, and fulfilling communications needs along with the previous tasks I had been completing with my internship. Growing up in the small town of Ropesville, TX, I always valued the importance of community. The impact of surrounding yourself with others who support, motivate, challenge, but most importantly, believe in you is unmatched. Not knowing where the next few years would take me after leaving my hometown was terrifying, but I firmly believe the Lord has led me to the place where I am supposed to be. If you knew anything about me previously, it would probably that I showed pigs all throughout grade school, was actively involved in FFA and 4-H, and grew up within the CTBR program. After my first semester in college, I began helping with the CTBR program at major shows. Life threw some pretty unexpected circumstances my way throughout the last four years, but the people within this association have helped shape me into who I am today. From that moment forward, my path in life led me all over the world. However, no matter where I ventured off to, I always found my way back to TPPA. I always wondered what drew me back to the office at 4514 Englewood Avenue. Being honest, I believe it is because this association has always felt like home. In this office, I discovered my passion for serving a community that means more than what meets the eye. Here is where I found the people who quickly became family, believed in me when I didn’t quite believe in myself, and who always supported me in all aspects of my life. Quite frankly, I don’t know what I did to deserve such great mentors and friends, but man how blessed am I to have found individuals like you all. There are many paths I could have taken after graduation, but I am thrilled to have the chance to work for the community of people that has presented me with numerous opportunities and stood beside me every step of the way. In the end, mothers do know best because life has been filled with so many surprises. However, it is no surprise of how excited I am to serve as your Director of Youth and Communications. 11

C apitol Report Scope 3 Emissions On June 17, 2022, the NPPC and other agricultural groups filed requests to the U.S. Securities and Exchange Commission about farmers’ requirements on climate disclosure rules. The NPPC declares that these requirements are troublesome and useless; moreover, these requirements will cause farmers to acquire expensive reporting that will delay farm environmental performance and violate federal law. The pork industry exhibits only one-third of 1% of U.S. climate emissions. The requests filed by the NPPC and ten other agricultural groups ask that the Securities and Exchange Commission abolish or revise the Scope 3 emissions disclosure requirement and the proposed rule to secure the alignment of Greenhouse Gas emissions with federal emissions reporting programs and federal law protecting livestock farmers from costly, inaccurate and unduly burdensome GHG emissions reporting. According to nppc.org, “Costs associated with the proposed rule would be significant, especially for small to mid-sized farms and would lead to industry consolidation and further impact not just rural communities where those farms are located but the ability of every American to enjoy bacon with breakfast.” Diseases, Workforce, and Exports Panel experts from NPPC at World Pork Exposition discussed legislative priorities of foreign animal diseases, workforce, and exports. For the first time in 40 years, African Swine Fever was detected in the Western Hemisphere, and protection of the U.S. Borders has never been more prominent. Dr. Liz Wagstrom, NPPC Chief Veterinarian, asked lawmakers for extra funding to help programs prevent and prepare for an outbreak. This funding will add more U.S. Customs and Border Protection agricultural

inspectors, the National Animal Health Laboratory Network, and more staff for the USDA Animal and Plant Health Inspection Service’s Veterinary Services. Along with this, the labor shortage in the pork industry has continued to increase over the last year. Pork Producers play a vital role in our economy and are essential for rural America to thrive. To this issue, Congress must to take action on the H2-A Visa reform. Currently, this visa only pertains to seasonal farm workers. Producers want to extend this visa year-round. On the other hand, implementing new trade agreements and expanding the ones we have is vital to the pork industry’s growth. Maria Zieba, NPPC assistant vice president of international affairs, declares, “It’s vital for the U.S. pork industry to strengthen relationships in the Asia-Pacific region. CPTPP would put us on a level playing field with other pork trading countries, such as the EU. We are also encouraging the Biden administration to address market disparities as part of ongoing IndoPacific Economic Framework negotiations.” Taking these actions now will impact the pork industry for years to come. Impact of Ukraine and Russia War In April, the National Pork Board held a webinar discussing how the Ukraine and Russian war impacted fertilizer, feed, and the livestock markets. According to the research done by Rupert Claxton, Meat Director at Gira, Russia accounts for 13 percent of globally traded fertilizer value. Because fertilizer prices are increasing, Claxton believes that farmers will conserve the fertilizer they already have or buy less, which will most likely lead to lower global yields and higher grain prices. In addition, Ukraine and Russia are heavy exporters of oilseeds and
grain. Before the invasion, prices were already rising; however, Claxton stated that we have seen these prices before; hopefully, it will encourage farmers to put some fertilizer on the ground to enhance their yields. Regardless of the war, weather conditions, and the increase in feed costs, swine production has remained positive. Currently, hog prices have gone up to about $16 per pound. Joe Kerns, partners for production agriculture, explains that we could continue to see these numbers for possibly the next two years.

Global Events in Relation to the Pork Market Between African swine fever, drought and war in Eastern Europe, there is a complicated global market for agriculture. However, the National Pork Board stated in a news release on July 8th, that there are potential opportunites for U.S. pork due to pricing trends.

Weather Conditions 2011 set a record high number for being the driest year in Texas history. A hot summer with little to no rain fall has many concerned that 2022 could be even worse. Over half of the state of Texas has been facing drought conditions all year. Even though there has been some rainfall, most of the soil is dry and hard, and many producers experienced water runoff. Long periods of heat and dry weather lead to crop loss, heat stress, limited feed for livestock, and an increased risk for wildfires. Victor Murphy, a climate service program manager for NOAA, said, “If you go long enough without any rainfall, the ground becomes bone dry, so whatever heat comes down, it just radiates back up. I think the state of Texas as a whole right now is very susceptible to that, and that’s what happened in 2011 too.” Along with this, these weather conditions can potentially cause significant issues with the Texas High Plains’ cash crop. The high plains produce 66% of Texas’s cotton and cottonseed and produce 30% for the U.S. In 2011 the loss of crops and livestock was approximately $7.62 billion. As of July 8th, Governor Abbot declared 164 Texas counties 14
are in extreme drought. This declaration states that producers will not be harmed for managing their crops during the drought. Texas Sunset Commission Every two years the Sunset Commission reviews state agencies to determine whether the agency is operating as intended and ensure there is no duplication or overlap with another agency. The Sunset process works by setting an automatic termination (Sunset) date in state law on which an agency will be abolished unless the Legislature passes a bill to continue it, typically for another 12 years. This cycle the Commission is reviewing 21 agencies. Majority of these agencies under review pertain to water. The Texas Water Development Board, Texas Soil and Water Conservation Board, San Antonio River Authority, and State Water Implementation Fund for Texas Advisory Committee are just a few mentioned on the list. Others on the list include the Office of Public Utility Counsel, Texas Juvenile Justice Department, Office of State-Federal Relations, Texas Economic Development and Tourism office, Electric Reliability Council of Texas, State Board of
Veterinary Medical Examiners, and Texas Commission on Environmental Quality. Border & Trade In April, Governor Abbott ordered an advanced inspection on every commercial vehicle entering a port of entry in Texas; however, these prolonged searches caused delays at inland ports and ultimately stopped trade with Mexico, which caused Texas businesses millions of dollars. With truckers clogging the border, lanes have been blocked, forcing all commercial traffic to find other ports of entry. It has been concluded that each inspection takes roughly one hour. The wait time of eight to twelve hours resulted in trucks running out of fuel and spoiled produce. Sid Miller, Texas Agriculture Commissioner, claims food prices will begin to rise if the inspections are not shortened. Emergency Relief Texas farmers and ranchers will be getting emergency relief fund payments from Congress due to the natural disasters of 2020 and 2021. Phase one of the Emergency Relief Fund compensates for vines, trees, bushes, and crops. All crops covered by crop insurance or NAP coverage, except grazing, are eligible to receive payment. Natural disasters include wildfires, drought, floods, hurricanes, winter storms, freezes, smoke exposure and, derechos. The second funding phase applies to crop and livestock producers who do not qualify for any of the existing programs. Russell Boening, Texas Farm Bureau President, said, “Texas farmers and ranchers are struggling to manage the much higher costs of
production that they’re paying due to inflation and disruptions in supply chains. Any assistance from the Emergency Relief Program that can help offset past losses because of natural disaster will be welcome by producers.” Right to Farm As rural areas continue to decrease, the “right to farm” is starting to diminish in urban areas. Currently, the law only protects farms established after August 31, 1981; however, local governments could harm the surrounding farms and ranches. “Texas Farm Bureau has become aware of instances where farmers’ land within city boundaries has become overregulated by municipal ordinances that prohibit many, if not all, normal agricultural operations, such as raising and keeping livestock, hay production and cultivating certain row crops,” said John Paul Dineen III, the Texas Farm Bureau District 4 State Director. In the Dallas-Fort Worth area, cities are using their public nuisance ordinances on agricultural activities. For example, grass for hay is not allowed to grow above 12 inches, or the city will mow it down and send a bill to the farmer. In other places, hay bales must be removed within 24-48 hours to abide by city health ordinances. Furthermore, some cities require buffer zones up to 250 feet around the property to be mowed short. As Texas continues to grow and take away more agricultural land, it is crucial for us to come together and ensure farmers and ranchers can keep their land inside the city limits.

Dr. Kevin Williams, associate professor of agricultural education at West Texas A&M University, The Swine Skill-a-thon is a knowledge-based has helped facilitate many swine skill-a-thon competition designed to enhance the educational competitions. The purpose of these contests is to provide a structure for youth to learn about various topics related to the production and management of swine. This contest is comprised of four skill stations covering the topics of animal health, management, anatomy and physiology, and meat science. Following the skill stations, junior participants are given a fifty question exam and intermediate and seniors are given a one hundred question exam with one hour to complete.
Where can you compete in this event? The State Fair of Texas will host a swine skilla-thon on October 21, 2022. The contest will begin at 9am followed by a preliminary and final round. Winners of each age division will receive a buckle and banner. For 2023, the San Antonio Livestock Exposition is set on February 7th. New for the upcoming year, the top 5 in each division are required to complete an interview about the swine industry to determine the final rankings. A $10,000 scholarship is awarded to each age group division champion at this contest. Rodeo Austin will host a skill-a-thon on Tuesday, March 21, 2023. This event is held during the arrival day of the market barrows. Be sure to check out Rodeo Austin’s website for more
information as the contest gets closer. If you are planning on attending national shows, be sure to check out the skill-a-thon contest at National Swine Registry Summer Type Conference. In addition, you can compete in livestock skill-a-thon competitions at Texas 4-H Roundup and Arizona National. Although this contest focuses on multiple species, it is a great way to apply your skills and knowledge about the livestock industry as a whole.
From a competitor’s perspective Youth Member, Kase Kelso from Seguin, has participated in swine skill-a-thon since he was in third grade and has competed at the State Fair of Texas, San Antonio Livestock Exposition, and the Rio Grande Livestock Show skill-a-thon competitions. Kelso said by participating, he has not only bettered himself as an advocate for the swine industry, but has gained other lifelong skills that will benefit him in the long run such as public speaking, time management, and more. “Participating in the swine skill-a-thon contests is a great way to increase your knowledge in the swine industry, and can help you with your swine project, and in your everyday life,” Kelso said. “With the skill-a-thon, it is all about what I do, how much I study, and what I know regarding pigs. I am in control of how well I do based on how much I study.” Jenny Sullivan, a 2022 Premier Exhibitor, from Idalou has competed in this event since 2018 at the State Fair of Texas, San Antonio Livestock Exposition, and Rodeo Austin. Sullivan said that this competition 27
has allowed her to expand her knowledge of consumer education and fundamental practices. “In my own barn, I have a better understanding of how to be aware of illness and how to care for my own swine projects,” Sullivan said. “ As a consumer, I have learned about pork retail cuts, quality, and safety practices when cooking pork to prevent food borne illness.” Youth member, Tye Goree of Tito’s Showpigs in Springtown, has competed in swine skill-a-thon for two years. Through competing at competitions such as the State Fair of Texas, Goree said he has gained a better knowledge of swine nutrition, heard health, and the needs of running an operation. “With my actions of starting up a herd of my own, the swine skill-a-thon has taught me how much to plan for the future of production and help to greater benefit this industry,” Goree said. “I have grown a better understanding of the true life cycle and development of swine operations.”
More than a contest The Swine skill-a-thon not only teaches individuals about swine, but also, responsibility, dedication, and good study habits. This contest allows participants to build knowledge over time and apply real world scenarios. Through learning facts and figures, students can learn how to apply this information to their future careers. “Skill-a-thon is not something you study the night before because the topics are so broad,” Dr. Williams said. “You learn more about the industry beyond just the show ring. Skill-a-thon is a good combination of bringing many different components of the swine industry all together. Whether that’s the show industry, the meats component, or commercial industry to some extent, students will have the broad overview from birth to plate.”

“Success is the sum of small efforts” For as long as Holly said she could remember, she has spent her time in the show barn. From attending her first show at six-weeks-old to watch her sister, Haley, show to prepping her family’s operation for farrowing season, Holly explained she would not be the person she is today without being involved within agriculture. “I was quite literally raised in a barn with my friends and family,” Alderson said. “I have my family and Jesus to thank for the success I have had in the show ring, but I wouldn’t be the person I am today without the opportunities I have been given through 4-H, FFA and being involved in production agriculture.” Holly is the daughter of Vicki and Doug Alderson and currently resides in Marion, Texas. She and her family have owned and operated Alderson Farms for many years. Holly is a recent graduate of Marion High School and has plans to attend Blinn College in the fall to pursue her livestock judging career and work on her degree in agricultural communications. While in high school, Holly was heavily involved in FFA and 4-H. Through FFA, Holly served
as the vice president of her chapter and received her Lonestar degree. While involved in 4-H, Holly was awarded the National William Danforth “I Dare You” Award and also served as her club president. Along with her honors, Holly has participated on several livestock judging teams where she was fortunate enough to compete at two national contests. She has also attended the Texas Farm Bureau Leadership conference, World Food Prize Institute, and participated in many FFA and 4-H competitions. Through her hard work and diligence, Holly has received several scholarships, including the Certified Texas Bred Registry Foundation Gilt scholarship and the San Antonio Livestock Show & Rodeo Supreme Gilt scholarship. Holly is also a member of the Texas Junior Livestock Association, Team Purebred Association and the National Junior Swine Association. During her time in the show ring, Holly exhibited the Supreme Champion Gilt at San Antonio, Reserve Champion Team Purebred at World Pork Expo, and the Reserve Champion Yorkshire barrow at San Antonio. She also raised and exhibited the Champion White OPB barrow at the State Fair of 33

Texas, Champion Chester gilt at Houston, and the Champion Chester boar at the Fall Classic. Amongst these accomplishments, she has shown gilts at Texas’ Elite Showcase and recently won Reserve Heavy Weight Dark Cross at this year’s show. Although Holly has had much success, she said she reminds herself the importance of having integrity in all that you do and to always be kind to others. In fact, her two favorite quotes are to “stay humble and kind,” as well as Philippians 4:13, “I can do all things through Christ who strengthens me.” “Growing up I began to realize, I wasn’t going to be the smartest kid in school or be the best livestock judger or showman,” Alderson said. “Even though I wasn’t always the best, I still worked hard. Through passion, hard work and remaining strong in my faith, some of my goals that I thought were impossible came true. I believe it is because someone bigger than me had a hand in it. When success does come your way, never forget to persevere and keep your head in the game. Let yourself feel the pride, but always stay humble and kind.”
Throughout her experiences in raising livestock, Holly relied on her values during challenging times. She said her biggest challenge was simply balancing life and raising show pigs. “There are many challenges that come with both raising and showing livestock,” Alderson explained. “Sometimes it can feel like there aren’t enough hours in the day to get everything done in the barn and with the sows, but thankfully we always do!” Because of overcoming these challenges, Holly found a new appreciation for the opportunities that have been presented to her. Between building friendships that will last a lifetime to learning life-long skills, Holly said she now truly understands the value of being raised within the livestock industry. “Not only have I learned the responsibilities that come with raising animals, but I now have a wide variety of knowledge about our industry,” Holly explained. “Through 4-H, I have learned the best way to advocate for the livestock industry. Through

livestock judging, I have learned how to remain focused and excel in public speaking. My swine projects have taught me the importance of hard work and that goal setting combined with dedication will always pay off. I wouldn’t be half the person I am today without these opportunities.” It is often said that you are who you surround yourself with. Holly mentioned that she has had many individuals that she has looked up to over the years such as the Langemeier family and Chuck Real. However, her biggest influence has been her father, Doug. “My dad is the backbone to my success,” Holly said. “He has encouraged me when times were hard and pushed me to be the person I am today. I could not have accomplished all that I have without his guidance and support.”

With a passion and drive instilled in her, Holly has big plans for the next few years. After her time at Blinn College, she hopes to transfer to Texas Tech University continue her education and hopefully compete on their senior livestock judging team. Holly plans to use her degree to continue her photography business and eventually work within marketing and design. In addition, Holly aspires to start her own swine operation and help her sister’s children show in the years to come. Overall, her main goal for her life is to help kids like herself learn and grow within the agricultural industry. “My biggest passion is helping little kids and teaching others about our agricultural industry,” Alderson said. “If I had any advice to give to younger generations now, it would be to never lose sight of why you started. It can be easy to feel discouraged. However, continue to learn new things, remind yourself that failure is okay, and that success does not happen overnight. At the end of the day, it’s not about raising and showing animals, but more of what you are learning along the way.”

A Leap of Faith to new beginnings By Raney Hodges Honey Grove, TX
At eight-years-old, my parents took me to our local county fair in Bonham, Texas. Just like any normal family it was just for the rides, corn dogs, and to try my luck at a goldfish to take home as my new prized possession. Little did I know that one walk through a show barn would have an everlasting impact on my life. As we were walking down the pig aisle, my dad looked at me and 40
said “I think I can get you pigs to show at our county show, would this be something you want to do next year?” The rest was history. In 2009, I got my first set of pigs. I can still remember the excitement of the car ride that my dad and I embarked on to pick up my first pig. As we all know, you can never leave with just one, so of course, we ended up coming home with three… surprise mom.
I spent all summer preparing for our county show in October. The day finally arrived and I vividly remember every moment. As the day went on, I remember the happiness I had while showing my first pig, Missy. Later in the day, to my surprise, I realized I had no idea what was going on. I found myself in the grand drive and had been named grand champion. After that, I was hooked and began my livestock showing career.
I continued showing pigs all throughout my grade school years and loved every minute of it (even the times when it challenged me). From the county show, jackpots every weekend, and major and national shows, I spent many hours meeting new people, learning life lessons and so much more. After graduating high school, agriculture was something I was sure I wanted to continue to be a part of for the rest of my life. Growing up in the industry molded me into the person that I am today. Now, I feel like it is time to give back to the industry that has
given so much to me. Currently, I attend Tarleton State University where I will be graduating in May 2023 with a Bachelor of Science in Animal Science with a concentration in production. This summer I was fortunate enough to have the opportunity to work alongside some of the best at the Texas Pork Producers Association. In March when I applied for the internship, I honestly was not confident that I would get it. A few weeks later I got the call from Doug Schaefer that I had been selected for the position. Without a doubt, I knew that this was something I
wanted to do. A month later, I took a leap of faith, moved to Lubbock, and started my internship at TPPA. My time with the association has been everything I thought it would. Between getting the “behind the scenes” experience and playing a part in many important events has been eye opening. Throughout my internship, I have gotten the opportunity to meet so many people within the pork industry and reconnect with others. Thinking back over the last few months, I have learned many life lessons that I will take with me for the rest of my life. First and foremost, I have learned that when opportunity presents itself to you, take the leap of faith because you never know what awaits you. It is perfectly okay to be scared of the unknown, but never let that get in the way of helping you grow. I was scared to make the move to Lubbock because I hardly knew anyone here. I did not want to give up a fun summer with my friends, but looking back I am not sure why I ever second guessed my decision. This opportunity has helped me grow so much as a person and learn so much about myself. The opportunities and life lessons are endless within this industry. Personally, I wouldn’t have chosen a better way to be raised other than being involved in raising and exhibiting livestock. Without these opportunities, I wouldn’t be the woman I am today.

In a small town with 311 people, one church, a small post office and one building where kindergarten through twelfth grade all attend the same school, I have come to know the definition of “small town living.” Growing up in an agricultural family, I have seen firsthand the struggles of an industry trying to feed a hungry world. My roots are planted deep in this community full of farmers, ranchers, dairymen, ag insurance agents, and feedlot owners. I grew up checking cattle, riding the tractor and watching my dad repair sprinklers. However, it never occurred to me how big of an impact all of these activities would have on my life. I started showing pigs in the third grade and immediately caught what most would call the “show fever.” It was something completely different than any other competition I had participated in. If you know anything about Nazareth, Texas, basketball is the highlight of our little town; however, there was just something about being in a barn working with my show projects that intrigued me from the moment I began. I was not the greatest showman by any means when I started, and boy did I have a lot to learn. I had plenty of mentors throughout my showing career. Ones who taught me perseverance, dedication, the importance of not giving up, and how to work hard for the things you wanted. During my younger years, I went straight to the truck majority of the time. I’ll admit I always left the ring feeling discouraged and frustrated; however, things started to look up as I got older. In 2017, I had the privilege of 44
exhibiting the Reserve Grand Champion Barrow at the Fort Worth Stock Show. Happiness, gratitude, and adrenaline flowed through my body. My hard work finally paid off. Coming off of the high of finally achieving one of my goals, I felt almost as if I was unstoppable. When we finally succeed in something we have worked so hard for, it is easy to get caught up in the feeling of success. For me, I felt as if I had gained a confidence that would take me to places I had never been before. However, sometimes we get too caught up in our achievements that we often overlook the true value of experiencing new challenges along the way. I remember being in the ring at the Houston Livestock Show my junior year like it was yesterday. I had a pretty good pig that had a chance to win one of the heavyweight classes and maybe even more, and I was nervous and fearful of what might happen. In the end, I didn’t win my class. I actually placed second behind a young lady many of you know, Riley Reep. To this day, I still remember the disappointment, sadness, and anger towards her. She won. I lost. I had never been this angry at another exhibitor for beating me, except maybe my brother, but man, my emotions were overflowing. Thinking about this industry as a whole, I sometimes feel we lose sight of why we do what we do. We get lost in our daily lives of trying to make a living and trying to better our livestock that we forget the very reason we got into this business in the first place-- our passion and love for the agricultural

The sun is shining and the smell of freshly cut grass is in the air, as you hear the faint sound of a whistle as you drive by any football field in the state of Texas. Growing up in Texas, football season is in a league of its own. We all grew up under the stadium lights cheering on our team to victory. However, another, and possibly everyone's most favorite part, of fall weekends in Texas are the tailgates. It is time to fire up those grills for tailgating season! Let us help you kick-off your tailgates with some of our fan-favorite receipes.
Baco n-w r ap p e d pork tend erl oin bites It is a powerhouse combination you can’t pass up because it is simple, easy, and delicious. You won’t want to head to a tailgate without them.
Ingredients :
2lbs unseasoned pork tenderloin 3 packages of bacon Seasonings of your choice
Instructions:
1. Preheat the oven or grill to 400 degrees. 2. Cut the tenderloin in bacon into bite size pieces then wrap each tenderloin piece with bacon using toothpicks to secure. 4. Season the pork with your favorite seasoning blend. 5. Place on the grill for 20-22 minutes or until the meat reaches an internal temperature of 145 degrees (be sure to rotate every 5 minutes.) 6. After it finishes cooking, let rest for 10 minutes.
Touchdown tip:
Because pork tenderloin is one of the leanest cuts of meat it is also very easy to dry out during the cooking process. Brine or marinades can help to not dry it out when cooking it. For this particular recipe, grilling the tenderloin would be the best option.

1. Cut the jalapeños in half then remove the seeds from the inside 2. Slice cream cheese into horizontal blocks then place inside each jalapeño half 3. Wrap with bacon and season as needed 4. Cook for 30 minutes or until the bacon is fully cooked 57

Pork Exports Remail Below Year-ago levels despite growth in in multiple markets Data indicates that the pork export value from May 2022 was $65.27 per head slaughtered which is down 23% from July 2021. Due to a decrease in exports to China and Hong Kong, U.S. pork exports are also still below year-ago levels. However, pork exports to Mexico in May continued to remain and exports have increased to Central America, Latin America, and the Carribean. In addition, U.S. pork exports to the Dominican Republic set a new record in April totalling 60.87 million pounds.
USDA Q2 Hogs and pigs report A webinar produced by Pork Checkoff on June 29 discussed domestic weather patterns and predictions, gobal events, livestock markets, and the USDA Q2 Hogs and Pigs report. Major topics of this webinar included drought monitoring, global trends in crop production, market implications, and inventory of the market and breeding herds. U.S Producers can respond to germany's recent ASF outbreaks Two more cases of African swine fever (ASF) were confirmed in the eastern and western parts of Germany.

U.S. pork porducers can protect their farms and the domestic pork industry through taking precautions and recognizing the steps for onsite preparedness such as biosecurity and disposal planning. In addition, producers can create an AgView account so animal health officals can see movement records if a disease is confirmed.
Exports and economic outlook
During the World Pork Expo, Dr. Demont Hayes and Steve Elmore examined the economic outlook for the pork industry. They also discussed global trade, domestic demand for crops and pork, and the short-term and long-term price predictions. Steve Elmore, Corteva’s chief economist, explained that markets are at 2013-2014 levels, vegetable oils caused the food price index to rise, the Consumer Price Index for food at home is the highest it has been in 40 years, pork increased 13.7%, and that cost of gas and diesel is making everything else expensive. He also gives insight into inflation and points out that supply issues will not be fixed for at least five years. Also, the saving rate is down 4.4% because people are not saving as much money due to higher prices. Feed prices are also another issue. Unforeseen weather conditions in South America will impact the upcoming corn planting season, affecting prices. The Russian-Ukraine War has impacted wheat, sunflower, and corn markets; furthermore, we do not know when the Ukrainian and Russian infrastructure will return online. The economics professor at Iowa State University, Dr. Demont Hayes, explains how global events and foreign animal diseases continue to affect U.S. pork exports. According to porkcheckoff.org, “U.S. pork prices and breakeven cost are high, which is why exports are down and profitability limited. Additionally, inventory is lower, and consumption is higher this year, so there is less pork to export overall.” U.S. pork exports to China have decreased since the beginning of the pandemic. Currently, China’s swine production is the highest in the world, and if it continues to rise, there could be a chance of China leaning back on U.S. exports. At the moment, the U.S. has lost its competitive spot in world pork markets. A limited number of hogs are coming into the U.S. market and a reduced amount of products available to export. The downfall of China’s imports has constructed a growth in European exports. During the webinar, Dr. Hayes states, “If China were to get back to production, and I think they will, and Europe continues to cut exports and production, and I do think they will–then U.S. exports will come roaring back.”
hot topics in the Pork industry Bill Evens, National Pork Board CEO, spoke about the 2022 priorities made by the Board of Directors. The primary goals of pork checkoff include building trust and creating a positive image of U.S. pork, keeping African Swine Fever out of the U.S., making U.S. pork a global sustainability leader, engaging and supporting producers and contract growers, and growing international markets for U.S. pork. Even also stated that the National Pork Board plans on working with industry partners such as the National Pork Producers Council, U.S. Meat Export Federation, U.S. Department of Agriculture, North American Meat Institute, and the American Association of Swine Veterinarians on local, state, and federal levels. Along with the 2022 priorities, Victor Ochoa, managing director of SwineWorks LLC, highlighted the current labor shortage we are facing. However, the pork industry can remain a competitive employer by taking care of existing staff, revamping benefits and wages, attracting younger individuals, using social media, and seeking other visa options. Sustainability is something farmers have been trying to master for years. The United Nations describes sustainability as “meeting the needs of the present without compromising the ability of future generations to meet their own needs.” In the last several years, consumers have been interested in where their food comes from and what is in the products they purchase. As producers, we need to make it easily accessible to find this type of information and help consumers learn about the pork production process. 59

Renew or purchase a membership On the homescreen of the www.texaspork.org website, click on the Shop TPPA tab. Click on the Producer Membership icon. Fill out your farm name in the name submission box then check out.
Complete a litter record online On the homescreen of the www.texaspork.org website, hover over the CTBR tab and click on Complete a Litter Reorcd online.
Complete the form the best you can. This form MUST be completed in order to be able to purchase CTBR certificates for major shows. On the numbers of litters farrowed, please list the number of litters EXPECTED. Click submit when finished.

Everything You Need To Know About Pork Belly Pork Belly: 90% Fat, 10% Protein, 100% Flavor
WHAT IS PORK BELLY? Pork Belly is the boneless cut that remains after the loin and spareribs are removed. Pork belly comes from a hog’s belly’ or underside after the loin and spareribs have been removed. Fresh pork belly is succulent and richly flavorful and is often served in small portions. Pork belly is at its best and is most tender when prepared using a slow cooking method, such as braising. Pork belly is the flesh from the belly area of the pig. When sliced and cured, it becomes bacon. Left whole or cut into smaller chunks, pork belly responds well to moist heat cooking, turning it fork-tender. Pork belly is a popular menu item among restaurant chefs who appreciate its versatility, flavor, and texture. 131
HOW DO I STORE PORK BELLY? Uncooked pork belly that is wrapped tightly or stored in an airtight container (like a zip top bag) can be stored in the refrigerator for about three to five days or in the freezer for up to six months. Leftovers should also be stored in an airtight container, well-sealed in the refrigerator overnight for up to two days.
HOW DO I COOK PORK BELLY? Pork belly performs quite well when cooked low and slow. The connective tissue in the meat needs time to break down slowly, allowing the fat to render out and the meat to become forktender. For best results, score the fat on the top with a knife, sprinkle with salt and pepper or your own spice rub, then sear until super crispy. Transfer the meat to a Dutch oven and allow it to braise (crispy skin side up) for a few hours, until the pork reaches an internal temperature of at least 145 degrees and the meat pulls apart. There are multiple ways to cook pork belly if you aren’t going to use it to make homemade bacon. Common methods include roasting, smoking, and searing and can be used as the main feature or enhancement to any menu.

BACON VS. PORK BELLY: WHAT’S THE DIFFERENCE?
WHAT IS BACON?
You may think you know bacon, but how do we get it? What makes for quality bacon, and what are the different ways it’s prepared? We’re here to answer those burning questions. The bacon we most often encounter in the U.S. is streaky pork bacon, which is cut from the pork belly, or fleshy underside of the pig. It is technically pork belly, but pork belly isn’t necessarily bacon. We’ll break down that difference later on. This streaky bacon, also known as side bacon, features layers of fat alternating with layers of muscle that run parallel to the skin of the pig, also called the rind. Bacon can also be sourced from the back, collar, shoulder, and jowls. There is, of course, “bacon” alternatives cut from cows, turkeys, and chicken too. In the U.S., pork bacon is commonly salt-cured or brined. Oftentimes, the bacon featured most prominently at the grocery store contains unhealthy compounds like nitrates and nitrites for color and extended shelf-life. Bacon without these compounds are often carried by some grocery stores, but they can be more difficult to find. And if you love crispy bacon, there’s a good chance you’ll love pork belly, too.
WHAT IS PORK BELLY?
Pork belly is the uber-fatty and rich portion of meat cut from the belly of the pig. It’s uncured, and often sold in big slabs, making its preparations much different from sliced streaky bacon. Pork belly is as unctuous a cut of meat as you can get, and it’s popular in cuisines the world over. You’ll find it braised in Chinese cuisine, or deep-fried in Filipino cuisine. It can also be roasted and grilled. However you prepare it, pork belly is fall-apart tender and will melt in your mouth when cooked properly. Just be careful not to overcook it and cause the muscle and fat to seize up and turn rubbery. Since pork belly is uncured, you don’t have to worry about preservatives like nitrates or nitrites. 133
WHAT’S THE DIFFERENCE BETWEEN PORK BELLY AND BACON?
So, streaky pork bacon is pork belly, but pork belly isn’t bacon. Instead, pork belly is the whole slab cut from the fleshy underside of a pig. Streaky pork bacon is cut from this slab. Pork belly is unsmoked and uncured, while much bacon found in the U.S. can undergo a lot of processing, though. While pork belly is, you know, always pork belly, bacon can actually be sourced from different parts of the pig like the back, collar, shoulder, and jowls. In fact, bacon can be cut from entirely different animals, like cows, turkey, and chicken. The biggest difference between bacon and pork belly, though, is how you prepare the two.
WHEN TO USE PORK BELLY VS. BACON
Not sure when to use bacon over pork belly? Let’s break it down. Bacon is delectable on its own, but it’s also an incredible ingredient for enhancing recipes. It’s most commonly pan-fried, but you can also bake it, grill it, and microwave it. It lends itself well to savory dishes with its salty succulence, but it’s just as delicious in sweet treats, too. Pork belly, meanwhile, is delicious braised, roasted, fried, and grilled. You’ll find lots of different worldly preparations, like Chinese braised pork belly, or crispy deep-fried Filipino lechon kawali. However you cook your pork belly, take special care not to overdo it—keep it rich and fall-apart tender, not rubbery.

P u t ti ng your bes t foot forward Tips and tricks on how to manage your new show projects this show season
“Purchasing baby pigs for a major show is a fresh start for you and your show pigs,” said Christi Seidenberger. “When it comes to preventing illness amongst baby pigs, it is best to be proactive versus reactive.” As pig buying season begins for the 2023 major show season, everyone has hopes to keep their show projects on track. However, we sometimes often 140
overlook simple practices that could prevent our new group of show barrows and gilts from succeeding in the future. Starting with a Clean Slate The Seidenberger family from Garden City, Texas, has had much success amongst the Texas major shows, including Owen Seidenberger being
named a Certified Texas Bred Registry Premier Exhibitor in 2022. However, as we all know, success does not happen overnight. Christi, mother to the Seidenberger family, said they set the foundation for their upcoming show projects with a fresh and sanitized barn. “We start our season off by power washing, bleaching, and disinfecting any surfaces previously touched by other
pigs,” Seideberger said. “This includes all pens, feeders, waterers, mats, and our trailer, just to name a few.” After every aspect of their facilities are clean, the Seidenberger family takes further measures to ensure their barns are a safe place for incoming show pigs. To prevent illness, the family said they wear disinfected shoes in their barn. “Shoes that were worn at stockshows, sales, or any other barn are absolutely not allowed in our barns at home,” Seidenberger explained. “We have an ample amount of show coverings for visitors and keep Tek-Trol disinfectant near every entrance to our barn for visitors.” Although the Reep family no longer has show pigs of their own, Cody Reep still enjoys helping other families at Texas major shows. Over the last 14 years, Reep agreed to take intense sanitation measures before allowing new pigs to enter their barn. “Prior to picking up babies, we always sanitized our trailer as much as we sanitized our barn,” Reep said. “We would Tek-Trol our barn and trailer prior to picking up our new show projects. After our new pigs entered the barn, we would spray a product called Intervention diluted with water on our aisles throughout the barn after cleaning pens. This was a way to ensure all potential illnesses from outside sources were being prevented as soon as possible.” Taking the Next Step Although sanitation measures are critical at the beginning of show season, the Seidenberger and Reep families said they favored taking extra measures for
each individual pig. “Regardless of where the pig comes from, each pig gets a exceed injection and dectomax upon arriving to our barn,” Seidenberger said. “We also tend to utilize our mediator system and keep a working relationship with our veterinarian as a backup precaution.” In addition to watching for signs of illness, Reep said he continues a deworming program for as long as possible. “When new show pigs enter our barn, I like to give them all Draxxin and worm them with Safeguard every 15 days for the first 60 days they are at our farm,” Reep said. “After the 60 days are finished, I continue to worm them every 30 days.” Keeping track of this information for each pig may seem overwhelming; however, there are many ways to record this data to ensure your projects stay on the right track. “Our family always had a giant whiteboard divided with electrical tape to signify each pen,” Reep said. “It may seem strange, but it allowed us all to stay on the same page in terms of vaccinations, feed, and weights when the time came. If needed, we always had a spiral labeled with each pig’s identification at the top to record more detailed information.” In addition to taking the next step with your new show pigs, there are many ways to go about “breaking them in” to ensure you are headed in the right direction. “Honestly, the younger you start working with your show pigs, the better,” Reep said. “From the day you bring them home, start spending time with each pig so you can build up their trust. Once this is established, then you can begin
to train them. There are many directions you could go from there, but always remember that building the initial connection is key.” The Transition to Your Feeding Program There are many ways you can transition each show pig into your feeding program once they enter your barn. Although it comes down to personal preference, the Seidenberger family said they like to begin feeding their show pigs with what would be best for each pig. “We prefer starting our pigs on the ration that works best for them,” Christi said. “Whatever ration allows our pigs to grow and just be a pig without the concern of what the breeder had them of previously because sometimes that information is simply unavailable.” No matter how you begin your feeding program, we all know the struggle of ensuring that all of your show pigs keep eating. Even though we wish there were a cure-all method to this issue, Reep said he has had luck with a few different techniques. “If one goes off of feed once they get home, I immediately check if their feed was fresh,” Reep said. “Sometimes we would utilize leftover feed from previous years, so that could be the root of the problem. If necessary, we would use B-12 supplements or dirt from outside for another way to them consume iron.” All in all, as Seidenberger mentioned, it is better to be proactive versus reactive. By staying ahead of the game at the beginning of the show season, you will set the foundation for success for yourself and your show projects.

Biosecurity guidelines Practical biosecurity guidelines that we can all follow Whether you are a 4-H/FFA member that has been at some shows or a hog breeder, please remember there are important biosecurity practices we should all follow.
Recommended Supplies for Use at Swine Farms: BE PREPARED by having the proper supplies. Here is a checklist of supplies that should be used by farms and/or those visiting swine farms: 3 Disposable Boots – have enough for everyone to double boot at each location in case it is necessary; purchase boots with a min. of 4 ml thickness. 3 Disinfectants - Accel, Tek-Trol (comes in both a liquid and an aerosol), 1Stroke, Environ, Virkon S, Synergize, or Chlorox; it is recommended to have both wipes and sprays. 3 Clean Tote Box – this box should house all of the “clean” supplies (plastic boots, coveralls, trash bags, sanitizer, etc.) so that they are kept separate and are sealed away from a potentially contaminated environment. 3 Trash Bags – for use in throwing away disposable items after completion of the visit.

For Potential Buyers Visiting Swine Farms: 1. COMMUNICATE with the breeder/owner prior to arriving at their farm learn their expectations. Establish what direction to enter the farm, where to park, and what to wear. Follow the wishes of what each farm owner wants. Some will have specific instructions and different requirements that may be more detailed. Just because something is suitable for one, doesn’t mean that will work for everyone. Ask the owner to detail any farm-specific biosecurity protocols that you will need to follow during the visit. Ask about the current herd health status. If the farm is undergoing a disease outbreak, it is recommended to NOT visit this farm due to the increased risk of spread to other farms that will be potentially visited. 2. PARK in the designated parking area for the farm. Obey all signage regarding access to specific areas. If no parking area exists, park as far away from the livestock barn as possible on the gravel or hard surface, or park on the edge of the public road close to the location. Avoid parking/driving in muddy areas on the farm. 3. LEAVE ALL PERSONAL ITEMS in the vehicle and do not bring them onto the farm; this should include, but not be limited to whips, ball caps, jewelry, etc. (anything that manure or infected dust particles can be transported on should be avoided). If it is necessary to wear a ball cap at multiple farms then you should apply an aerosol disinfectant on it between farms. 4. Respect the LINE OF SEPERATION at each farm. The Line of Separation is defined as the line between the area that is to be used by the visitor and the area to be used by farm personnel. 5. DO NOT TOUCH any pigs while on the farm if you do not have to. People that touch hogs need to sanitize hands upon departure before getting back into the vehicle. 6. When leaving REMOVE DIRTY BOOTS next to your vehicle but before you enter the vehicle. Put trash into a garbage bag and place in a location designated by the farm or away from clean supplies. Everyone should clean hands with sanitizer or wipes before entering the vehicle. Note that you should try to keep the inside of the vehicle as sanitary as possible. 7. WASH/DISINFECT VEHICLES AND TRAILERS in between each road trip. Pay special attention to the wheel wells and undercarriage. A high temperature wash is critical. Be sure to thoroughly disinfect the inside of the vehicle between road trips. Each night during a road trip spray the inside of the vehicle with an aerosol disinfectant and wipe down the steering wheel. 8. Shoes should be sanitized daily when traveling to farms and sales with one of the recommended disinfectants. If you are stopping at multiple farms in the same day then you should use an aerosol disinfectant (ie. Tek-trol) to spray down everyone’s shoes, clothes, and ball caps between farms. 143
For Swine Farm Operators: 1. Maintain a log of visitors. 2. Establish a clear line of separation at the farm. This is a line dividing the area that is to be used by the farm for live animals (often referred to as the clean area) and the area that is outside of the live animal area (the dirty area). Only the owner goes into the pens and has contact with the pigs. Enforce no reaching into pens and zero contact with pigs by visitors. It is recommended that a separate area be used to show/view pigs. 3. Designate a parking area for visitors. 4. Traffic flow – utilize a single direction traffic flow by designating a single entrance / exit point for vehicles. 5. Foot baths – If managed correctly, provide and encourage the use of foot bath stations as people enter the farm. Refresh the solution periodically depending on level of use. However, bear in mind that a contaminated foot bath could be more detrimental than helpful. Do not rely solely on the use of a foot bath. 6. Establish a designated area away from all swine for disposable items, such as boot covers and other trash, to be collected for removal.
An ounce of prevention, is worth a pound of cure.
Dilution is part of the solution. 144
When the show ends, the real work begins: Bio-security is just as important after the show! Taking the necessary precautions is important right now to protect the health of our industry. While it may be simple to just rid the pens of sand or shavings, cleaning and disinfecting your barns, trailers and even all of your tack is an important step to ensuring the health of your next set of pigs and everyone else’s. When cleaning equipment you can’t just stop with the outside of your showbox. All showbox contents such as spray bottles, brushes, feed cups, buckets and even your whip need to be disinfected. 1. Make sure to wash everything well; disinfect with diluted Clorox, Accel, Tek-Trol or other disinfectant, and let it all sit for a period of time. It is best to do this at a location not on your farm or in an isolated area farthest away from high traffic area and animals. 2. Do not wear the same clothes, shoes or caps you wore at the show once you arrive home. Clean and disinfect as soon as possible. 3. Dispose of any unused feed that was in the barns. It is possible for virus particles to survive on feedstuffs. 4. Monitor all animals daily for illness. If you see any signs of illness alert your veterinarian immediately.
