This has to be an all-time favourite of mine. Simple to make and so tasty!
Ingredients
- 3 tbsp sweet soy kecap manis
- 1.5 tbsp soy sauce
- 1 onion, diced
- 1 red chilli, diced
- 3 cloves garlic, crushed
- 2 tbsp peanut oil
- 300g diced chicken thighs
- 0.5 teaspoon shrimp paste
- 4 cups cooked and cold rice
- 4 eggs
- 2 tomatoes, sliced
- 1/2 cucumber, sliced

Directions
Mix the soy with the kecap manis and set aside.
- In a large wok over high heat, add the oil. Once the oil is hot, add the onion and cook for 2-3 minutes before adding the chilli and chicken and cooking for 4-5 minutes stirring constantly.
- Add the garlic and shrimp paste and mix through well.
- Now add the cold rice and break it up well before mixing through the other ingredients well. Continue to cook stirring well for 4-5 minutes, you are looking for the rice to all be the same colour.
- Add the soy and kecap sauce you prepared earlier and pour it around the outside, then mix through well.
- Serve the rice with a fried egg on top and tomato, cucumber and sambal on the side.
- Enjoy!
