Peach and Prosciutto Sandwich

Sun in your hair, sand on your feet, and a big sandwich to complete your summer. Tossing ripe peaches with red wine vinegar and chili crisp draws out their sweet juices to make a spicy, tangy sauce. Crusty bread, like a baguette or ciabatta, is the way to go: Broiler-toast the bread halves before layering with cheddar or brie, the seasoned peach mixture, basil, prosciutto, and more chili crisp, giving you sweet, salty, funky, and spicy all in one bite. large peaches, sliced

1

Tbsp. red wine vinegar

1

Tbsp. chili crisp, plus more

Kosher salt

1

demi-baguette, sliced in half lengthwise, toasted

4

oz. cheddar slices

2

sprigs basil, leaves picked

4

oz. prosciutto slices

Preparation

  1. Step 1

    Gently toss peaches, vinegar, 1 Tbsp. chili crisp, and a pinch of salt in a small bowl to combine.

    Step 2

    Place baguette, cut side up, on a plate. Layer cheese over bottom half and top with peach mixture, then basil leaves, prosciutto, and more chili crisp. Close sandwich; cut in half.

  • What a wonderful sandwich! I used a sesame seed baguette, the seeds added a great nutty element when toasted, and Gouda since it was already in the fridge. Can’t wait to make this again and play with different kinds of cheeses.

  • I am obsessed with this recipe and made it twice this week already. I'm already adicted to chili crisp and this combo puts it over the top in terms of deliciousness. Delectable combo of sweet peaches, creamy cheese (I used brie) plus the salty prosciutto and the umami, slightly spicy taste of the chili crisp and vinegar. Drizzled the leftover dressing on top of the cut bread slices so as not to waste a drop and help soak in the goodness. Will try other cheeses like some of the suggestions here next time.

  • I don’t like heat or spice in my foods, what other condiment can I substitute, for the chili crisp, in this particular sandwich that will pair well w/ peaches?

  • This sandwich was AMAZING. I followed the recipe exactly. I spooned a bit more chili crisps on my sandwich, because I like more heat. I will be making this again while peaches are in season!

  • Chili crisp is a delicious spicy and crunchy Chinese condiment found at Asian grocers, some other grocery stores, but also Trader Joe’s has a version too if you can’t find it anywhere else. This sandwich was meh first try with Brie, but PHENOMENAL with goat cheese.

  • well that was damn good! we wrapped em up for a long road trip because we deserve good sandwiches on the go and it was in perfect condition 16 hours later!

  • Overall recipe is good. I would never bring this on a picnic, though (as suggested in the magazine). This sandwich is crazy messy. Roll of towels and wet wipes, messy. If I make this again, I will only use one large peach, that is maybe not quite as ripe, and cut the dressing down. I used white cheddar and white peaches.
