Almond Cookies

If ever Mom had a signature cookie, this was it!  If you knew Mom, Dad or any one of us, you knew and loved these cookies.  They are “melt in your mouth” delicious.  They appeared at every birthday, graduation, anniversary, Christmas, communion, and “just because” party.   If a friend called and said they were stopping by in half an hour (as Mom’s friends often did), Mom would whip up a batch of these cookies and have them on a plate before her friend arrived.  Coffee or tea and these cookies made for a million good memories for Mom, Dad, their friends, us and all of our friends.  Whip up a batch, and enjoy!

Ingredients

  • 1 & 1/2 sticks of unsalted butter at room temperature (or microwave for 20 seconds)
  • 1/2 cup of sugar
  • 1 egg
  • 3/4 cup sliced almonds
  • 1 & 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp almond extract

Instructions

  1. Preheat oven to 425 degrees, and lightly grease two cookie sheets with Crisco.
  2. In a medium bowl, using a small wood spoon, cream the butter and sugar until smooth.
  3. In a small bowl, beat together the egg and almond extract (using a wire whisk or a fork).
  4. Add the egg mixture to the sugar and butter and stir vigorously with the wood spoon until well blended.
  5. Mix the baking powder and flour together and slowly add the mixture to the creamed butter and sugar batter.
  6. When the batter is smooth, stir in the sliced almonds.
  7. Drop the batter by teaspoonfuls (do not form into balls) onto the greased cookie sheet, an inch apart.
  8. Bake 5 to 7 minutes or until golden, being very careful not to burn (these will cook quickly so keep an eye on your oven).
  9. Let cool and dust with powdered sugar if desired.
