If you’re in the latter camp, you’ve got to try this recipe. We’ve added just one simple ingredient to them—Greek yogurt—that gives them the creamiest, fluffiest, cheesiest texture ever. Best part? There’s no special technique, and you’ve probably got all the ingredients for it in your fridge already. Topped with chives over a slice of homemade bread, we think there might be no better breakfast.

Ingredients
- 2
large eggs
- 2 tsp.
2% or whole milk Greek yogurt
Kosher salt
Freshly ground black pepper
- 1/2 tbsp.
unsalted butter
- 2 tsp.
thinly sliced chives
Directions
- Step 1In a medium bowl, whisk eggs and yogurt until blended; season with salt and pepper.
- Step 2In a medium nonstick skillet over medium-low heat, melt butter. Add egg mixture and cook, undisturbed, until eggs just start to set, about 2 minutes.
- Step 3Using a rubber spatula, gently move eggs around in skillet to scramble. When eggs are almost cooked through, fold in chives. Continue to cook, stirring, until scrambled to your liking, about 1 minute more.
