Giant Donut

This is no mere cake made to look like a donut. Deep fried, this giant strawberry and raspberry jelly donut is the real deal.

Ingredients

Ganache

  • 7 ounces white cooking chocolate
  • 3 1/2 fluid ounces thickened/whipping cream
  • 1 teaspoon strawberries and cream essence (can sub for whatever essence flavour you like!)
  • 2 drops pink food gel

Giant Donut

  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup water, warm
  • 1/2 cup granulated sugar, warm
  • 1/4 cup evaporated milk, warmed to 110 degrees
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1 large egg
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 14 3/4 ounces all-purpose flour, then more as needed
  • 8 cups vegetable oil, for frying
  • funfetti sprinkles
  • cinnamon sugar to sprinkle
  • 4 tablespoons raspberry jam

Steps

  1. Add white chocolate and cream into a large microwave safe bowl. Microwave for 20 seconds at a time, mixing each time until smooth.
  2. Add pink food gel and essence and mix until evenly coloured and well combined.
